Before launching into today’s topic, here’s a quick story.
I was recently speaking to a good friend who lamented that she wanted to get more raw milk and cheese, but she couldn’t take the unpleasant “farmy” undertones of flavor.
She’s not the only one.
Many people have recently shared with me that they love the idea of raw milk, but they can’t tolerate the taste. It tastes “farmy,” or “gamey.”
These people sharing with me are believers in supporting small, local producers. They want to be part of a sustainable local food system and often realize that raw milk has benefits.
But the taste puts them off.
I get it. I’ve had some quite unpleasant sips of raw milk over the 20+ years I’ve been working with these farmers. And in my experience, there most definitely is a common denominator. Shady farmers.
Here is a principle to keep in mind:
Raw milk should taste good.
When raw milk is cleanly produced, and sold fresh it tastes amazing! It tastes like fresh milk with a little cream in it.
It shouldn’t have that gamey undertone or taste like a muddy barnyard. If your milk tastes like that or sours quickly, you are most likely not getting fresh milk or there is a serious problem at the source. If that sounds familiar, you can demand better! There are many good resources for farmers to look into so they can produce the cleanest milk possible.
Sad to say it, but there are also some shady farmers who will sell old milk or not take proper care while milking.
So demand better! Or find a better source. You deserve it!
